The two portions of Chenin blanc that make up this Chenin both come from bush vines planted in Stellenbosch. The biggest portion of fruit comes from Karibib in the Polkdraai region farmed by Jozua Joubert. The other portion hails from a block towards the Bottelary HIlls area on Geluksoord farmed by the du Bois family. Both batches were whole bunch pressed to a stainless steel tank for light settling overnight. From here the juice was racked to big old french oak barrel where natural fermentation was allowed to start on its own. Once the wine was dry it was stirred on its gross lees for 9 months without sulphur. The wine was gently filtered before bottling.
ABOUT THE WINEMAKER:
Alex McFarlane is one of the most exciting young winemakers in the Cape at this moment. She makes her wines out of a cellar in the Hemel-en-Aarde, and they are fine wines which are focused and polished and beautiful drinking experiences. Alex focuses on what she calls South Africa's heritage varieties: grapes that showcase the rich cultural landscape of the wine trade, and that have very much shaped what we now know the Cape Winelands to be today.
